Broccoli Slaw with Oranges & Apples

September is all about the veggies. To help us find more ways to get our daily dose of greens, I wanted to share one of my favorite veggie recipes my mom makes. I don’t think this is the exact recipe, but it is the dish itself. Don’t let the broccoli scare you away! It’s actually pretty good. Here’s the recipe:

Ingredients:

Salad:

10-12 oz bag of broccoli slaw

¼ cup minced red onion (optional)

1 big orange

1 granny smith apple

Citrus Dressing:

¼  cup extra-virgin olive oil

2 tbsp apple cider vinegar

1 tbsp lemon juice

1 tbsp orange juice

1 tbsp orange zest

1/4 tsp mustard

1 tbsp honey or maple syrup

Salt and pepper to taste

Steps:

  1. Toss the minced onions and broccoli slaw in a bowl; mix them together

  2. Grate the orange to save some zest. Then peel the orange.

  3. Wash the apple. Cut the apple and orange into bite sized pieces for your salad. Save any juice that you get while cutting for the dressing. Add the apple and orange pieces into the salad.

  4. For the dressing: Place all the ingredients in a bowl and whisk them until blended.

  5. Add the desired amount of dressing to the salad to taste. If you want the flavors to really set in, mix the dressing and slaw, and let it sit in the fridge for at least two hours. This allows it to absorb the flavor of the dressing.

  6. Enjoy!
